Paysan 'Old Vine' Cabernet Sauvignon '23 piedmont making it a delightful choiceSourced from 45 year old vines in Santa Cruz Mountains, this Cabernet shows a dense purple core. The classic nose offers crme de cassis, pencil lead, and a touch of dried sage. The full bodied palate delivers impressive concentration blackberry preserves, dark chocolate, and firm but ripe tannins with Antonio Galloni (94 pts) noting its "mountain vineyard tension." Best 2025 2035 with dry aged ribeye. Only 275 cases made.
