Vouette et Sorbee Champagne Brut Nature Fidele ['22 Base] NV GROWER 5L format preserves this beautyFidele means faithful, and Bertrand Gautherot chose the name to describe the job: report the ground honestly, add nothing. This is his Pinot Noir, grown biodynamically in Buxieres sur Arce at the southern tip of Champagne, on the Kimmeridgian limestone that also underlies Chablis. It ferments with native yeasts in barrel and goes into bottle brut nature, meaning no sugar was added at the end to soften the edges. That takes nerve; it also means the
